High Fiber Banana Bread

There’s something about banana bread that feels like home — warm, simple, and full of goodness. As moms, we don’t always have time for complicated recipes, but we do care about nourishing our families with ingredients that actually support health and energy.

That’s why I’ve been loving this Organic Fiber — it’s clean, plant-based, and an easy way to boost fiber intake without synthetic fillers or weird ingredients. Just one scoop mixes seamlessly into baking or smoothies and helps keep digestion (and energy) steady — which we all know makes a big difference in how we feel day-to-day.

This banana bread is a simple, healthy twist on a family favorite — moist, naturally sweet, and satisfying. You’d never guess it’s high in fiber!

High Fiber Banana Bread

Prep time: 10 mins | Cook time: 1 hr | Total time: 1 hr 10 mins

Makes one full-sized loaf

Ingredients

1/2 cup butter, room temp

3/4 cup organic cane sugar

3 very ripe bananas

2 large eggs, lightly beaten

1/2 tsp vanilla extract

1-1/3 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 scoop Organic Fiber

Optional: 1 cup chopped roasted walnuts, pecans, or chocolate chips

Instructions

1) Preheat oven to 350°F. Grease a loaf pan (9.25x5.25) and set aside. If using nuts, lightly roast them in a skillet, stirring continuously so they don't burn. Let cool, and chop to your desired coarseness.

2) In a mixing bowl (I use my Kitchen Aid), cream together butter and sugar.

3) Add bananas, 2 eggs and vanilla (1/2 tsp) and mix on high until they reach the consistency of a thick puree.

4) In a separate bowl, mix together flour (1-1/3 c), baking soda (1 tsp), salt (1/2 tsp), cinnamon (1 tsp) and Organic Fiber (1 scoop). If you aren't using fiber, use 1-1/2 cups of flour. Add this mix to the batter a bit at a time, careful not to overmix.

Once just mixed, add nuts or chocolate chips, if you're using them.

5) Pour batter into prepared loaf pan. Bake at 350°F for 55-60 mins or until a toothpick inserted into the center comes out clean. Let it rest in the pan for 10 min before transferring to a wire rack to cool.

Slather with butter while still warm and enjoy!
